Almond Biscotti


Almond Biscotti

Makes: About 2 1/2 - 3 dozen

Ingredients

1 cup butter, softened
1 cup brown sugar
3 eggs
1 tsp vanilla
1 tsp almond extract or Amaretto
3 cups flour
1 tbsp baking powder
1/2 tsp salt
1 cup chopped, blanched almonds

Directions

1. Preheat oven to 300 F.

2. In a large bowl, cream together the butter and sugar until fluffy. Add the eggs one at a time and beat until combined. Add the extracts and beat.

3. Combine the flour, powder and salt in a separate bowl. Mix in the flour mixture, a little at a time until combined. Stir in the almonds.

4. Line a baking sheet with parchment paper.

5. Divide the dough in half and form each half into a rectangle, place onto the baking sheet.

6. Bake for 35 minutes. Remove to wire racks and let sit 15 minutes. Increase the oven to 325 F.

7. Transfer the biscotti to a cutting board and slice into about 3/4 inch slices. Place on baking sheet.

8. Bake for 10 minutes; flip and bake another 10 minutes.
